You steal coins from person X, the group finds out and brands you a dirty rotten c**k, person X later dies and coins become worthless. You're made a pariah for nothing.

Well now, who says that dying means you don't have any cash on you? If you've banked some money, then die, the coins should presumably still have the same value.

What I'm thinking of even more is the potential to trade coins between players, not knowing whether your coins are worth more or less than theirs are (or even anything at all!)

I'm especially interested in what kinds of shenanigans those two gangsters could get up to. Perhaps the boss will use his coins to pay somebody off, only to reveal at the end that his lackey was banking all of their combined money! Then all he has to do is ask the lackey for all of his coins at the end of the game!
