So, apparently you can choose a class to "play" and not know what you can do. I assume they have a manual or something to read through? Or they have to figure out everything initially by themselves (and then create said manual)?

One of the old folks gave them a tutorial, so presumably they just learn everything for themselves. Sort of like new players in an MMO.
